Chicken + Herb Breakfast Sausages
- 1 lb ground chicken
- 1 teaspoon salt
- 2 tablespoons tarragon finely chopped (or any other herbs you like_
- 4 tablespoons of coconut oil
Combine the ground chicken, salt, and finely chopped herbs in a bowl. With clean hands, divide the mixture into 8 equal amounts and shape each portion into a firm, flat sausage patty.
Heat coconut oil in a pan and gently fry the sausages over a medium heat on all sides for 10-15 minutes. Check with a meat thermometer that the internal temperature reaches 165F.
